Chanterelle (Cantharellus cibarius) is a popular edible mushroom with a spicy, slightly peppery taste that can be used in many ways in the kitchen. The golden-yellow mushrooms taste excellent with pasta, gnocchi or rice, but they are also very tasty in an omelette and dishes with meat.
Chanterelles are not only delicious, they are also very healthy: they have a high level of beta-carotene content (provitamin A) and they are known for their anti-inflammatory effect as well as support the immune system. Chanterelles are also known for very high content if vitamin B1, Phenols, flavonoids, ascorbic acid and lycopene are also found in chanterelles.
After drying, they can be stored safely for a long time, ground into powder and used as a seasoning.
